The Perfect Tomato Sauce
Perfect tomato sauce: why “perfect”? Because a tomato sauce can be made in a thousand different ways, but this recipe contains the essence of the most classic traditional Italian cooking. Ingredients
- Fresh Red Tomatoes 2kg
- Garlic 2 cloves
- Extra virgin olive oil
- Unsalted Butter 20gr
- Basil
- Salt
Instructions
You need excellent gravy tomatoes (other than salad tomatoes which are harder and less juicy) ripe and pulpy. Wash them thoroughly, remove the green stalk and cut them into pieces
In a pan, heat the oil and cook the garlic until golden (be careful not to burn it because it becomes very bitter). Remove the garlic, remove the pan from the heat and throw the tomatoes in the oil, a few at a time because they could splash.
Add salt and cook over low heat, with the lid on, for at least half an hour or until they are completely undone. Then pass them through a vegetable mill and collect the pulp in the pan. Add a little more oil and finish cooking, always over low heat until it has reduced a bit, it will take about another 10 minutes
Add a couple of basil leaves, a knob of butter and let it cool: The Perfect Tomato Sauce is ready
Notes
Perfect tomato sauce is pure simplicity: if you don't want to pass the sauce or if you don't have a vegetable mill, no problem, skip the step. You will get a less elegant Perfect tomato sauce but just as good A variation is to dip the tomatoes for a few seconds in boiling water, until you see that the peel breaks. Immediately freeze them in ice water (to save the bright red of the tomatoes), remove the skin, cut them into pieces and cook them following the recipe It will take less time but the final result, without cooking the skins, will be a little less tasty
