

Fried Pizza (Pizza Fritta)
Fried Pizza (Pizza Fritta) is a recipe that is lost in the mists of time. Those who did not have an oven to cook would prepare their own pizza in a pan, frying it in abundant seed oil. A meal that is not exactly healthy, but really delicious, which in my family is traditionally prepared once a year, on the evening of December 24th I teach Fried Pizza recipe during my "Pizza Cooking Class" in which many families participate: kids have fun shaping the dough and preparing the balls to fry I love making small balls (but traditionally small round pizzas are prepared) which I then cut in the center and stuff with many ingredients: ham, tomato and mozzarella, olives, vegetables: use your creativity and you will have a delicious appetizer for your dinners between friends
Ingredients
- Flour (white 00) 500gr
- Water 350gr
- Yeast 15gr
- extra virgin olive oil 100gr
- salt 20gr
- Following your taste:
- Tomato Sauce
- Dried Tomatoes
- Mozzarella Cheese
- Olives
- Prosciutto
Instructions
Prepare the dough following the instructions inhttp://www.italiancookingtips.com/pizza-margherita/. When it is ready and perfectly leavened, stretch it on a floured surface and give it the shape you prefer. You can make small round pizzas, balls, donuts but is it important to have small pieces to cook them more easily
Heat the oil in a pan with wide edges: the ideal temperature for a good frying is 170 ° / 338 F. If you do not have a thermometer, throw a very small piece of dough into the hot oil, it must begin to fry immediately, rising on the surface
Fry a few pieces of pizza at a time to prevent the oil from falling in temperature. In contact with the heat you will see the pizza swell and increase in volume. Make sure that the pieces are immersed in oil for at least 3/4 and turn them often to have a uniform cooking (they tend to float only on one side, so it is better to make small pieces that can be turned over more easily)
After about 10 minutes, the pizza should be golden brown and cooked through. Drain your pieces and let them rest for a few minutes on absorbent paper
You can eat your Pizza Fritta bites alone (they are really delicious) or cut them in half and make a small sandwich filled with your favorite ingredients. In the photos I made Pizza Fritta with tomato sauce and mozzarella, with dried tomatoes and olives, with ham

Fried Pizza is also cooked by Sophia Loren in "L’Oro Di Napoli" (a masterpiece of italian cinema of 1953) in which she plays a woman of the people who prepares and sells fried pizza on the street corner Fried Pizza, in fact, was a very popular street food: a simple and very poor food that could be bought in the alleys of the center of Naples and many other cities in Southern Italy. Today the health rules forbid it, but sometimes I prepare it with the greatest joy of my friends
